Calzones

So, it’s the weekend and the weekend is meant for good food.

I made these last weekend.

And I LOVED them. Mostly because I love cheese, but I also love pepperoni and black olives (which is what I stuffed them with)

I used my pizza dough recipe and I just added a spoonful of honey. And then I mixed it for just a minute or two longer, to make it a little flakier. This pizza dough will make 4 calzones. And it will last for a few days if you keep it in the fridge.

And then I stuffed them with amazing cheeses.

I mixed together 2-3 cups mozzarella cheese, 1/2 cup butter, 1/3 cup chopped fresh herbs (I used basil this time, but you can add chives, parsley…. whatever your heart desires)…. and then I added a bit more basil! 1/3 cup parmesan cheese. garlic salt (to your tasting) Pepper (to your tasting) And then… I added a cup of ricotta cheese. (That’s what makes calzones amazing!!!!!)

And then I added whatever meat everyone wanted. I’m a pepperoni girl. With black olives (did I mention that?), but you can add whatever you want (just like when you build your own at Old Chicago)

Roll them up and top with melted butter to hold them together. Cook for 15-17 minutes. And then top with more melted butter and Italian spices (you can literally buy Italian spice in one bottle) and maybe a little bit more garlic powder. If you want to make it less healthy… you can dip in marinara or ranch!
