Salmon Croquettes and Tartar Sauce

Winter allows me to expand my own recipe book. And go back to it all year long. 
We are major seafood fish eaters. And are really blessed to almost always have Alaskan salmon either gifted to us or fish for it ourselves. 
However, I find salmon, no matter how perfectly it’s cooked…. needs something. 
And homemade tartar sauce is the perfect thing for these. 
I made Salmon Croquettes (which are just salmon cakes, just like crab cakes. With almost the exact ingredients. So stinking good. Especially with the tartar sauce! 

Salmon Croquettes

Ingredients
½ cup flour
¼ cup yellow cornmeal
A filet of salmon, cooked (you can also use canned salmon, just be sure to make sure that whatever you choose is cooked)
1 red bell pepper , finely chopped
1 onion diced
3-4 cloves of garlic
Old Bay seasoning
1 large egg , beaten
1 tablespoon Worcestershire sauce
½ teaspoon seasoned salt
¼ teaspoon pepper
½ teaspoon garlic powder
1/2 cup mayonnaise
1 bunch of cilantro , chopped
Canola oil for frying

Directions

In a large bowl whisk together flour and cornmeal.
Add salmon, bell peppers, sweet onion, garlic, seasonings, Worcestershire sauce, mayonnaise, cilantro and egg. Mix until well combined.
Shape into about 6-8 patties. Heat oil in large skillet over medium high heat.
Once skillet is hot, cook patties for 2-3 minutes on each side or until they are a golden brown color.
Serve immediately with your favorite tartar sauce. Or whatever sauce you love!

Tartar Sauce

1/2 cup mayonnaise
1/2 cup sour cream
1/4 cup sweet relish
1/4 cup dill pickle chopped
spoonful of smooth dijon mustard
1/2 teaspoon Old Bay seasoning
1 tablespoon dill finely chopped
1 teaspoon lemon juice or a little bit of pickle juice
2 tablespoons onion minced and garlic if you want it
pinch of black pepper
I mix these all together and add them a little at a time. Until it tastes exactly how you want it to taste.
