Tuna Poke Bowl and Sauce

I’ve been waiting to make this salad for a LONG time. I’ve had a hard time finding sushi grade tuna/ahi in my area, but I FINALLY found it in Fort Collins last week. (At Sprouts… oh my goodness I love that place) 
The first time I had ahi, was about 10 years ago in Hawaii. I ate three plates of it, like a homeless dog who had never tasted food before. But what made me love the taste… was of course the sauce. 
In this salad, I have spinach, kale, edamame, avocado, quinoa, tomatoes, and carrots. And of course ahi tuna.

I only bought one steak of it, as I was the only one in the house eating it (it’s a big treat for me) And this lasted for three meals.

And for the dressing(s) I made a typical poke bowl dressing (I had to make this twice) 
1/4 cup soy sauce
1/4 teaspoon sesame oil 
1 tsp rice vinegar
1/2 teaspoon fresh ginger
1/2 teaspoon fresh garlic
1/2 teaspoon lime 

And then I topped it with spicy mayo. 

FREAKING delicious.
