Pizza Dough and Cheese Sticks

I’ve been trying to figure out pizza dough for quite a long time. And I think I may have finally figured out what it needs to be.

Sticky. The pizza dough, before you let it rise needs to be sticky between your fingers.

And the recipe is probably the easiest thing ever.

For the Dough

1 packet of yeast

2 cups warm water

1/4 cup sugar

1/2 teaspoon salt

1/4 cup veggie oil

4 cups flour (I have been using regular flour)

Pour yeast into warm water and let sit for about 5 minutes until it becomes frothy. Mix gently with sugar and add to stand mixer (with dough hook if you have it, you can also mix by hand.) add flour, salt and veggie oil. Mix slowly until it forms a sticky ball.

oil a bowl (I always use a glass bowl) and cover. put dough in your oven with the light on for about an hour (I have been leaving it a couple hours…. from after school until 5 or so)

Separate into three sections. Roll out onto flour/ garlic covered surface (I mix in garlic powder with my flour, but I have also used cornmeal)

For the Cheesesticks

Once your dough is rolled out, melt half a cup of butter and spread it over your dough.

In a separate bowl mix together 2-3 cups mozzarella cheese. 1/2 cup butter. 1/3 cup chopped fresh herbs (I used basil this time, but you can add chives, parsley…. whatever your heart desires) 1/3 cup parmesan cheese. garlic salt (to your tasting) Pepper (to your tasting)

Mix together and spread over dough.

Cook at 450 for 12-15 minutes. It changes depending on altitude, so just watch it to see what works best for you.
