White Lasanga with Artichokes and Zucchini

I’ve never eaten regular lasanga in my life. I’ve never had ground beef. So when this recipe came across my feed I absolutely had to try it. And I have to say…. it will now be part of my wheelhouse of recipes, but probably only on a day where I really want to spend time cooking. It takes a bit of time and effort and of course I changed up how it was cooked versus what I was told to do. There are so many versions of this out there… but this is mine!

Ingredients:

Cooked lasagna noodles. Enough for 3 layers, about 12 (I found that after cooking, it’s easiest to put them on a sprayed cooking sheet until everything is ready to put together.)

Zucchini strips: sautéed in a little oil and salt and pepper. (I’m afraid of vegetable peelers, so I cut mine as thin as I can get them.)

Spinach: Once you’re done with the Zucchini, throw in a bag of spinach and sauté it until it’s wilted. Add a little salt and pepper.

Alfredo Sauce:
6 tablespoons salted butter

1/4 cup all-purpose flour 

3 cloves garlic chopped finely 

2 cups milk

1 cup heavy cream

3 cups grated Parmesan 

Salt and pepper

Over medium heat, melt the butter. Sprinkle in the flour, whisking to form a roux, and cook over medium-low heat for 2 minutes. Add the garlic and cook until fragrant, about 1 minute. Slowly add milk and cream, whisking until smooth, and cook until thickened. Remove from the heat. Season with salt and pepper. Fold in the Parmesan until melted.

Ricotta Cheese Mix
8 ounces ricotta cheese

1/4 cup grated Parmesan 

1 large egg yolk, whisked

Store bought or homemade pesto (add to your liking as much or as little as you like)

Salt and Pepper

Mix together

And lastly

1 can of artichokes, more if you like

Mozzarella slices. Deli sliced if you can, but not necessary.

Assembly

And I mean… you can put any of this in any order you want…..and layer it however you want. There are no rules!

Spread a layer of Alfredo on the bottom a buttered or sprayed dish (9×13 is great, if you don’t have that, it’s ok to change it up.) Add a layer of noodles. A layer of ricotta mix. A layer of mozzarella cheese. A layer of spinach. Then add another layer of noodles. A layer of Alfredo. A layer of artichokes. A layer of mozzarella cheese. Another layer of noodles and Alfredo and a layer of zucchini strips and a layer of mozzarella cheese.

Phew… that was a lot right?!!!

Totally worth it. TOTALLY!
