Spicy Guacamole

It’s the middle of January, and I have shared any recipes this year. That’s because I’ve been eating Birthday cake and drinking Dirty Martinis. That’s how I rolled into the year (but hey, I’ve been to the gym every single day, but one.) So we have family rolling in this evening, nothing new or out of the norm (one of the reasons I had to buy a big old house was to have extra room for all the passers through) Anyway, we’re still celebrating birthdays this weekend, but I decided to make Chimichangas, and to go along with that….guacamole.

I didn’t eat guacamole until about a year ago. (it was part of the whole mashed up food thing, no I will not be eating tuna any time soon.)  And now, I pretty much can’t get enough of it. It’s wonderful. I like it just simple, and spicy, and kinda lime-ish, and chunky.
