Spicy Roasted Green Pepper Macaroni and Cheese Topped with Easy Green Chili

Ingredients

  • 3-4 cups elbow macaroni noodles
  • 6 Slices of bacon
  • 2-3 cups whole milk
  • 2- 3 spicy roasted green peppers (I use farmers market roasted green peppers, moderately to very spicy)
  • 5 cloves garlic, diced
  • 1 small onion diced
  • 1/2 block of velveeeta cheese (family size, or one whole small block) cubed
  • 3 cups shredded Mexican cheese
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 cup – 1 cup panko bread crumbs
  • Green Chili for topping (recipe below)

Directions

  • Cook pasta according to package directions. Then drain but do not rinse. Set pasta aside
  • Preheat oven to 350 degrees
  • Cook bacon until golden brown (in cast iron baking dish if you have it), remove and chop. Do not discard bacon grease.
  • Sauté onion and garlic and in the bacon grease for just a few minutes.
  • Add milk, and cheeses until smooth. When mixture is all melted add chopped roasted green peppers. And salt and pepper as desired.
  • Mix macaroni and bacon into the cheese mixture.
  • Top with bread crumbs
  • Bake in preheated oven until bread crumbs are a little brown.
  • Top with green Chili

Green Chili Recipe

  • Chop up one onion and 5 or 6 cloves of garlic.
  • Sautee with one stick of butter (the real stuff).
  • Add a couple large spoonfuls of flour to make a rogue.
  • THEN… add two cups of water.
  • 3 bullion cubes
  • 1 bag full of cleaned, seeded and chopped roasted green peppers (10-12) (we get our roasted peppers at farmers markets, etc and they come in sandwich bags, I just use full one.
  • Bring to a boil and let thicken.
  • Add a couple teaspoons of cumin and salt and pepper to taste
