I don’t have very many recipes from my mother. She doesn’t generally love the kitchen. But every once in a while she would whip us up some treats. Cookies. Pull aparts. Just a little something to tide us over.
I posted these cookies years ago. I still make them occasionally. I still love them and I think of my mother every time I eat them. This time I added a little lemon glaze to them. They are are oh so tangy and sweet. Perfect for a little treat.
Pastels
3/4 cup of margarine
1/2 cup sugar
1 3oz package of jello of choice. (I used strawberry-banana)
2 eggs (I ran out of eggs and only had one, so I substituted yogurt instead)
1 tsp vanilla
2 1/2 cups flour
1 tsp baking powder
1 tsp salt
Mix all ingredients in order given. Shape into balls and flatten with glass dipped in sugar. Bake at 350 degrees for 6-8 minutes.
Lemon Glaze
2 cups powdered sugar
zest of one lemon
juice of one lemon.
Mix together. That’s it!
