In the summer I’m always looking for easy things to make and take. I stumbled across a recipe for cucumber salsa a while back. I couldn’t find what I was looking for so I just made one up. It’s refreshing and different. I tried to keep it from being spicy because I didn’t want it to be. I wanted it to be cool. It passed the kiddo test, which is always a good indicator if it’s good or not, or will be eaten by others. As usual, use as much spice as you want, or as little as you want.
