Cookie Dough Brownies

 Ok.. so I’ve been seeing this recipe floating around for a while and I finally decided that I needed to try it. And HOLY CRAMOLI, it’s completely fantastic (have you all noticed I haven’t posted anything healthy in months…I need to work on that)

So first of all, I started out with my uber awesome brownies. I make these without looking at the recipe most of the time, so when I was told that it was confusing as to what two “cubes” of butter was, I thought I should probably revamp a little. The recipe is from an old church book and I’ve been using it for ages.

Best Brownies on the Planet

2 sticks melted butter

2 cups sugar

1/4 to 1/2 cup of cocoa (I always use the latter if not more to make them ultra chocolately)

4 eggs

2 cups flour

2 teaspoons vanilla

some nuts if desired (again, I don’t cook with nuts, so I never desire them)

Mix these ingredients in order given and put into regular pan used for cooking brownies…..whatever size you desire. Bake at 350 degrees for 35-45 minutes, but keep testing with a toothpick to make sure they are done. Sometimes they take longer. Super easy. Super super good.

Now for the cookie dough part. I would not ever, after having survived salmonella, post a recipe with raw eggs. So this is a non-raw egg cookie dough recipe I found out there. And it’s completely amazing on top of brownies.

COOKIE DOUGH (EGG FREE!):
3/4 cup butter
3/4 cup light brown sugar, packed
3/4 cup granulated white sugar
3 Tablespoons milk
1 1/2 teaspoons vanilla extract
1 1/2 cups all-purpose flour
1 1/2 cups mini chocolate chips

“In a medium bowl, use an electric mixer to combine butter, brown sugar and white sugar. Mix in milk and vanilla. Mix in flour just until combined. Stir in chocolate chips.  Spread cookie dough over the cooled brownies. Refrigerate until the dough is quite firm. It’s okay to speed up the process and place it in the freezer too. The firmer the dough, the easier it will be to cut into neat squares. Use a sharp knife to cut the brownies. You may need to wipe the knife off with a paper towel in between cuts since the fudgy brownies and cookie dough will tend to stick to the knife a bit.”
