Sun-dried Tomato and Artichoke and Chicken Pasta

I’m not a planner of meals. I spend probably 65% of my day planning, and scheduling my time, that when it comes to food, I just kind of fly by the seat of my pants. I’m also really bad at writing down recipes that I come up and love. So I purposely took a picture so I would remember!

I had house guests this past weekend and knew they needed some good home cooked food. Fill your belly kind of food.  So I made them pasta. I don’t eat a lot of pasta, but when I do, I make it worth my while rich and creamy, full of flavor and of course with bacon. Bacon makes everything so much better. And I won’t lie, after I took this photo… I added WAY more cheese, because…well cheese is my main food source. That’s not an exaggeration. Also, a one year old ate this, and if a baby with or kiddo will eat something, it normally means it’s not terrible tasting!

Ingredients:

1 box penne pasta cooked

1.5 cups cream

1/2 cup real butter

1 jar sun-dried tomatoes

1 small jar marinated artichokes

1 small onion chopped

5 cloves of garlic minced

Italian seasoning (as much as you want for taste)

7 strips of bacon cooked and chopped

Two large chicken breast cooked and sliced into thin pieces

Salt and pepper to taste

Fresh parmesan to garnish

How To:

Sautée onion and garlic in butter until clear.  Add cream and sun-dried tomatoes until it becomes a little more thick (4 or 5 minutes, if you need to add pasta water to help that process do that.)  Add artichokes and stir for another few minutes.  Let sauce thicken a bit. Add seasoning. Mix together in large bowl, pasta, bacon, and chicken. Add salt and pepper to taste. Top with parmesan cheese.
