Zucchini Corn Bread and a Handsome Kid

I did manage to get a few zucchini out of my mostly dead garden this year. It’s actually been really sad not having all my pumpkins and such all over the house, but what can you do? I made Chicken Chili last week on the one day it was cold, and since then it’s been like summer, in the high 80’s. It’s a little crazy. So anyway, I decided to make some cornbread to go with it. Now, I kind of don’t love corn bread, but I thought if I could find a recipe that had a bunch of stuff in it, and it was really soft and light, I would like it. Well…. this was it. I found it here, and it’s pretty awesome. I didn’t sift my flour, which I’m sure didn’t help, and it didn’t turn out as pretty as hers, but it did taste delicious, and I completely recommend it.  Plus it’s a good way to use up that zucchini.

 

I also decided to squeeze in a few fall photos of my little one. This is the time of year that I’m running in 50 different directions, getting pictures done, etc. I just need to grab a couple of my own handsome young man. It only took us 20 minutes, so it wasn’t too bad. Then we moved on to our normal Friday activities.
