Like many of you out there, we have/ had in our possession a whole box of peaches. We ate about half of our box in the first three days. We have since paced ourselves and now have just a few left. I decided this past weekend, to use up some of the peaches, to make a peach salsa. I was a little leery of how it would taste, but it turned out fantastic. The peaches didn’t really make it sweet, it just gave it a little zing.
