Layers: Canyon Tea and Greek Salad

So, for those that have visited the Grand Canyon….did you have falling dreams after? Oh my, have I. Crazy falling dreams where I jerk awake.  It might not have been a great idea of reading about all the deaths there shortly after my visit. But, geez, the internet is right there and we were so curious. Which by the way, more people die in planes and on the water than falling. There is a great book that tells you all about it. We didn’t buy it. We just scoured the internet. Because everything on the internet is true. Right?

I couldn’t get over the layers of sandstone and rocks and beautifulness on this adventure. It was amazing. In one of the gift shops they had “Canyon Tea” which was spice tea, but when you look at it, it does look an awful lot like the layers of rock. I thought that was clever. Very very clever. I posted our spice tea recipe about 7 years ago, so I thought I would pull it out of the vault. Plus it just sounded good as soon as I saw it and I’ve been craving it ever since!

And I also love these little containers for layering foods, they make the presentation gorgeous and they are really easy to take along with you on picnics, etc.  You can get them at the dollar store or target or where ever. They aren’t too hard to come by.

I have also been craving a good greek olive and feta mixture, so I decided to whip this up. At a wine tasting party this fall, a friend of mine brought something like this for an appetizer. I ADORED it. I wasn’t sure what she all put into it, but I think this might be kind of close. Or not. Regardless, it was my lunch today and it hit the spot. (Avocados and Kalamata olives are two of my favorite foods. )
