Milk Mints

I normally post recipes on Monday, been thinking about dubbing it “Make it Mondays”, but then there are weeks like this when food was the last thing on my mind on Monday. (I think I ate enough to feed a small country last week.)

And so the Christmas cooking begins. I’m pretty excited for it. Next week, be looking for some awesome stuff! Yay!

These came across my pinterest feed  from Averie Cooks, and I pretty much made them immediately. They looked so easy and I am a real sucker for homemade mints. They boasted that these taste like after dinner mints and I wouldn’t say that is exactly true. They do however taste much like cream cheese mints, which are by far my favorite ever. I might even go as far to say that they are my favorite candy in the whole wide world. So I renamed them Milk Mints instead. They are ridiculously easy to make. It only took me about a half hour to make two batches. They have passed approval by three different age groups, so I know they are good. I think next time I make them, just to make things interesting, I will add a little powdered milk, just to see what it does to the texture. I have a feeling I might like them that way.  I used peppermint extract for these (the kind from the grocery store, not the kind from health food stores) and I didn’t have problems with them being too minty or cinnamony .But you have to be careful with that sometimes. Just be sure to add a little at a time.
